Our olive oil stands out for its concentration of polyphenols, especially hydroxytyrosol. Olive trees grown in the harsh conditions of the Moroccan desert—where summer temperatures can soar to 127°F, soil is rocky, and water is scarce—undergo significant stress, triggering a survival response that encourages the production of high levels of polyphenols. This results in oil that boasts a remarkable hydroxytyrosol content, rich in antioxidants.

Our Olive Oil’s Distinctive Characteristics

Atlas Organic Extra Virgin Olive Oil is produced from an assortment of cultivars. In our historic bicentenary orchards, old varieties such as Picholine du Languedoc and Picholine Marocaine comprise the majority, while our modern orchards focus on Arbequina and Arbossana. We span a production area of 245 hectares (605 acres) in the Marrakech region, benefitting from a favorable altitude of 390 meters above sea level and well-balanced soil compositions.
Harvesting and Production Details
Harvest season runs from late September to late December, ensuring we capture the olives at their peak. Our extraction processes employ first cold-pressing at a maximum temperature of 26°C, preserving the oil’s flavor and nutritional profile. The yield varies, providing an impressive 450,000 liters from our modern orchards, with an acidity level as low as 0.2% for our extra virgin oils.
