The Unique Influence of the Desert
Our EVOO is naturally rich in polyphenols, especially hydroxytyrosol, due to the challenging conditions in the desert. The extreme heat, rocky terrains, and scarce water resources place stress on the olive trees, prompting a survival mechanism that leads to the production of heightened levels of antioxidants. This results in olive oil that boasts exceptional hydroxytyrosol content.

Morocco’s distinct and demanding landscape contributes to the exceptional quality of our olive oil. We cultivate olive groves with a commitment to sustainable practices that protect both the environment and the local populace. By choosing the right cultivars that thrive in an untainted environment, we ensure the production of premium olive oil. Our mechanized processes guarantee that our organic EVOO is first cold-pressed, preserving its superior quality.
Atlas Olive Oils sources its olives from ancient bicentennial orchards featuring varieties such as Picholine du Languedoc (80%), Picholine Marocaine (10%), Menara (2%), and others, while modern orchards predominantly consist of Arbequina (84%) and Arbossana (16%). Spanning 245 hectares (605 acres) at an altitude of 390 meters, our olive groves thrive in balanced soil, comprising 30% clay, 35% loamy, and 35% sandy textures.
Crafting Exceptional Olive Oil
With precise pruning techniques and varying tree densities, we yield substantial quantities of premium EVOO: up to 25,000 liters from ancient orchards and 450,000 liters from modern ones, all maintaining low acidity levels. Our harvesting season runs from late September to late December, utilizing a two-phase extraction process at temperatures not exceeding 26°C, resulting in a yield of 11.5% to 15%.
